In 2024, more than 60% of U.S. households purchased plant-based meat, dairy, or eggs. These foods are no longer niche, they’re part of a growing global shift toward more sustainable, secure, and just ways of producing protein. But what does this shift mean for public health? For climate goals? For the future of farming?
