Project aims
The project aims to develop a sustainable toolbox of edible fungi strains to obtain intact RuBisCO from GTR. It bridges fungi fermentation with leaf protein production from waste streams, generating two promising alternative proteins in a single system. A key objective is to develop a versatile toolbox of edible fungi for precisely fermenting GTR, with potential application to other leafy biomass due to similar cell wall structures.

Associate Professor, Institute of Food Science and Technology, College of Biological Science and Engineering, Fuzhou University
Chen Zhang earned his Ph.D. from Wageningen UR in 2016, specializing in designing processes to extract protein from green tea residue (GTR) using chemicals or enzymes. Since 2018, his research has focused on fungi fermentation using leafy biomass, inspiring this project.
