Michael Jamros

Michael brings hands-on experience across the plant-based protein value chain to GFI, where he analyzes the landscape to identify critical research gaps and direct scientific investment toward the highest-impact opportunities in crop development, ingredient processing, and supply chain.

Michael joins GFI with six years of hands-on experience in the alternative protein industry, spanning roles as Director of Ingredient Solutions at NuCicer Inc. and Director of Protein and Analytical Chemistry at Eat Just, Inc. Across both positions, he developed deep expertise in plant protein functionality, ingredient processing and scale-up, and the technical and economic barriers that determine whether a plant protein ingredient reaches commercial viability. His experience spans the full crop-to-ingredient pipeline, from informing breeding strategy through processing, characterization, and food applications. He holds a PhD in Chemistry from the University of California, San Diego, and a BS in Biochemistry from Virginia Tech.
