SUMMARY:The Science of Alt Protein: Characterization of extruded plant-based meats using ultrasonics
DESCRIPTION:The Science of Alt Protein: Characterization of extruded plant-based meats using ultrasonicsPast\n\n\n\n\nJoin Dr. Filiz Koksel to learn about her GFI-funded research that uses real-time ultrasonic information on extruded plant-based meats to improve their textural and nutritional properties. \n\n\n\n	Share this page on Facebook\n	\n	Share on Facebook\n\n\n	Share this page on Twitter\n	\n	Share on X\n\n\n	Share this page on LinkedIn\n	\n	Share on LinkedIn\n\n\n\n\n\n\n\n\n\nDr. Filiz Koksel\n\n\n\nAssistant Professor of Food Processing\, Food and Human Nutritional Sciences Department\, Faculty of Agricultural and Food Sciences\, University of Manitoba \n\n\n\n\n	\n\n\n\n\n\nWebinar description\n\n\n\nLow-intensity ultrasound waves are used as a tool to non-destructively provide information on the mechanical properties of soft media\, including soft foods such as bread dough and noodles. This technique has never been used to characterize extruded foods. In this seminar\, Dr. Filiz Koksel of the University of Manitoba will discuss her GFI-funded research to obtain real-time ultrasonic information on extruded plant-based meats and link this information to the physical (i.e.\, textural) and nutritional quality (i.e.\, protein digestibility) of the end-product. \n\n\n\n\n\nMeet the speaker\n\n\n\n\n\n\n\n\n\nDr. Filiz Koksel\n\n\n\nASSISTANT PROFESSOR OF FOOD PROCESSING\, FOOD AND HUMAN NUTRITIONAL SCIENCES DEPARTMENT\, FACULTY OF AGRICULTURAL AND FOOD SCIENCES\, UNIVERSITY OF MANITOBA \n\n\n\nDr. Filiz Koksel is an Assistant Professor in the Department of Food and Human Nutritional Sciences at the University of Manitoba. Dr. Koksel is a food scientist with expertise in food processing and non-destructive assessments of food quality\, and her research program aims to tackle issues related to an ever-increasing demand for sustainable\, high-quality plant-based foods. Dr. Koksel’s creativity in exploring new approaches in these areas is particularly noteworthy as her program is at the interface between food processing and materials science. To bring Canadian crops from the field to our tables\, Dr. Koksel’s program looks at several operations – such as milling\, mixing\, sheeting\, baking\, texturization\, and extrusion – to transform these crops into foods with superb palatability and nutritional value. Since 2017\, she has secured >$1.4M in research funding as PI or co-PI and >$2.3M as co-investigator to establish a thriving research program at the University of Manitoba. She has also mentored and contributed to training 30+ highly qualified personnel\, including K-12\, undergraduate\, and graduate students\, postdoctoral fellows\, research associates\, and visiting scholars. \n\n\n\n\n\n\n\n\nUpcoming events\n\n\n\nView all events\n\n\n\n\n	\n \n \n \n \n \n \n \n \n October 13\, 2026\n McNamara Alumni Center\n \n \n \n Bridge2Food North America\n \n \n \n Join GFI at Bridge2Food North America\, where food industry leaders will gather to explore the latest developments in ingredient innovation and alternative proteins. \n\n \n \n \n \n \n \n \n \n \n \n October 13\, 2026\n FAO Headquarters\n \n \n \n World Food Forum 2026: Protein diversification for the Global South\n \n \n \n How can protein diversification strengthen food systems across the Global South? Hice\, Ph.D.\n\n\n\nRegulatory Review Scientist and Microbiology Reviewer\, Division of Food Ingredients\, Office of Food Additive Safety\, Center for Food Safety and Applied Nutrition\, U.S. FOOD AND DRUG ADMINISTRATION \n\n\n\nOriginally from Milwaukee\, WI\, Dr. Stiffy Hice received their BS in Biological Science\, with minors in Printmaking and Psychology\, from the University of Tulsa in 2014; and their PhD in Food Science and Technology with a certificate in Food Safety and Defense from Iowa State University in 2019. After graduating from Iowa State University\, Dr. Hice joined the U.S. Food and Drug Administration (FDA) in 2019 as a Regulatory Review Scientist and Microbiology Reviewer in the Division of Food Ingredients (DFI) within the Office of Food Additive Safety (OFAS). Dr. Hice has managed the review of numerous Generally Recognized as Safe (GRAS) notices—with particular emphasis on microbial-derived ingredients\, bacteriophage preparations and live microbial cultures—as well as approval of direct food additive and color additive petitions that have been submitted to the Center for Food Safety and Applied Nutrition (CFSAN) at FDA. As a Regulatory Review Scientist\, one of Dr. Hice’s primary duties is managing both GRAS evaluation teams and petition review teams. Many submissions have robust regulatory and scientific considerations\, which must be evaluated to: (1) issue a response letter regarding the safety conclusions made by the submitter of a GRAS notice\, or (2) approve a food or color additive in response to a petition. As a Microbiology Reviewer\, Dr. Hice is charged with evaluating the microbiological safety of ingredients intended for use in conventional foods. Dr. Hice is also a member of several workgroups\, including the Cultured Meat Premarket Consultation Working Group and the DFI Infant Formula Working Group. \n\n\n\n\n\n\n\n\nUpcoming events\n\n\n\nView all events\n\n\n\n\n	\n \n \n \n \n \n \n \n \n October 13\, 2026\n McNamara Alumni Center\n \n \n \n Bridge2Food North America\n \n \n \n Join GFI at Bridge2Food North America\, where food industry leaders will gather to explore the latest developments in ingredient innovation and alternative proteins. \n\n \n \n \n \n \n \n \n \n \n \n October 13\, 2026\n FAO Headquarters\n \n \n \n World Food Forum 2026: Protein diversification for the Global South\n \n \n \n How can protein diversification strengthen food systems across the Global South? SUMMARY:Digital Report Launch: The Future Appetite for Alternative Proteins
DESCRIPTION:Digital report launch: The future appetite for alternative proteinsPast\n\n\n\n\nJoin the CSIS Global Food Security Program and the CSIS Energy Security and Climate Change Program for the launch of our new digital report\, The future appetite for alternative proteins by associate fellow Zane Swanson\, director Caitlin Welsh\, and director Joseph Majkut. \n\n\n\n	Share this page on Facebook\n	\n	Share on Facebook\n\n\n	Share this page on Twitter\n	\n	Share on X\n\n\n	Share this page on LinkedIn\n	\n	Share on LinkedIn\n\n\n\n\n\n\n\n\n\n\n\n \n\n\n\n\n	\n\n\n\n\n\nEvent description\n\n\n\nOur domestic and global food systems face challenges that compromise their productivity\, security\, and sustainability. Climate change\, economic shocks\, and geopolitical conflict have altered the production and flow of agricultural goods around the world\, while a growing global population and socioeconomic changes further strain our food systems. \n\n\n\nAnimal agriculture\, though an important source of nutrition and wealth\, can exacerbate the challenges posed by climate change\, disease emergence\, and economic shocks. Today\, many countries are seeking to change the way they produce food\, supplementing animal protein with non-animal protein sources that provide the precise experience of meat but require fewer inputs\, produce fewer greenhouse gas emissions\, and have simpler\, more adaptable supply chains. \n\n\n\nThese are known as alternative proteins. Created using plant-based or cellular agriculture\, alternative proteins have climate change benefits that are well documented\, but relatively less is known about their ability to address the global and domestic risks inherent to today’s food systems. \n\n\n\nWill alternative proteins reduce the risk of zoonotic disease transmission and antimicrobial resistance in food production? Can alternative proteins bolster the resilience of domestic food systems and enhance the economic competitiveness of the United States? And how will they affect the future of our national security? \n\n\n\nWe look forward to welcoming USDA Deputy Under Secretary Sanah Baig\, Carnegie Endowment for International Peace Senior Fellow Jon Bateman\, Schmidt Futures Program Scientist Genevieve Croft\, Barclays Managing Director and Global Head of Venture Capital Banking Matt Spence\, and Good Food Institute Founder & President Bruce Friedrich for this in-depth discussion on the role of alternative proteins in addressing global and domestic security considerations. \n\n\n\n\n\nEvent location\n\n\n\n\n\n\n\nGFI speaker\n\n\n\n\n\n\n\n\n\nBruce Friedrich\n\n\n\nPRESIDENT AND FOUNDER \n\n\n\nBruce Friedrich serves as GFI’s chief thought leader and relationship-builder\, working in close partnership with GFI’s global teams and food system stakeholders around the world. \n\n\n\n\nGet in touch\n\n\n\n\n\n\n\n\n\nUpcoming events\n\n\n\nView all events\n\n\n\n\n	\n \n \n \n \n \n \n \n \n October 13\, 2026\n McNamara Alumni Center\n \n \n \n Bridge2Food North America\n \n \n \n Join GFI at Bridge2Food North America\, where food industry leaders will gather to explore the latest developments in ingredient innovation and alternative proteins. \n\n \n \n \n \n \n \n \n \n \n \n October 13\, 2026\n FAO Headquarters\n \n \n \n World Food Forum 2026: Protein diversification for the Global South\n \n \n \n How can protein diversification strengthen food systems across the Global South? SUMMARY:The Science of Alt Protein: Manufacturing cultured fish fillet
DESCRIPTION:The Science of Alt Protein: Manufacturing cultured fish filletPast\n\n\n\n\nLearn how Dr. Frederico Ferreira is combining bioprinting\, electrospinning\, and electrical stimuli to produce cultivated fish fillets. Join us for a networking session after Dr. Ferreira’s talk to meet your next collaborator! \n\n\n\n	Share this page on Facebook\n	\n	Share on Facebook\n\n\n	Share this page on Twitter\n	\n	Share on X\n\n\n	Share this page on LinkedIn\n	\n	Share on LinkedIn\n\n\n\n\n\n\n\n\n\n \n\n\n\n\n	\n\n\n\n\n\nWebinar description\n\n\n\nCultivating seafood that recapitulates the taste and texture of conventional seafood requires leveraging multiple techniques. In this seminar\, Dr. Frederico Ferreira of Técnico Lisboa will explain his GFI-funded research that combines bioprinting\, electrospinning\, and electrical stimuli to produce whole-cut cultivated fish fillets. \n\n\n\n\nMore about the discussion\n3D bioprinting has the potential to produce structured cultivated meat products of complex biomimetic designs shaping\, in a balancing manner\, muscle and fat-rich regions at a scale of tenths of millimetre. On the other hand\, electrospun fibers can be produced\, with diameters at the nanoscale\, able to mimic collagen geometries typical of fish myoseptum. Electroconductive fibers have been previously used to support electrical stimulation during maturation of several tissues\, including muscle. Different approaches for manufacturing 3D multi-material fish fillet exploring bioprinting and electrospun scaffolds will be presented. Novel formulations of muscle and fat edible bioinks\, compatible with fish myoblasts and adipocytes\, were developed using a macroalgae’s polysaccharide and natural conductive conjugated molecules. Zein proteins were used to produce polymeric fibers. Different cross-linking strategies will be presented. Edible conductive molecules can be introduced as dopants into the muscle bioinks formulations and electrospun fibers to increase electroconductivity and support electrical stimulation during muscle maturation. Microalgae containing polyunsaturated fatty acids\, as omega-3\, can be introduced into the fat bioinks. All bioinks and fibers were characterized for their biocompatibility as well as structural and mechanic properties. Several 3D designs of fish products were conceptualized and prototyped produced to demonstrate the wide range potential of the approaches considered. Finally\, strategies for fish cell culture will be discussed.  \n\n\n\n\n\n\n	\n \n \n \n \n \n \n \n \n \n \n\nJoin our networking session after the webinar\n\n\n\nJoin this networking event to discuss the latest scientific developments in cultivated seafood.
