Wheat continues to be a dominant source of plant-based proteins in our diets. Changing dietary patterns to more plant-based diets and environmental pressures both on meat and intensive agriculture are driving opportunities to diversify protein crops in the UK. However\, market adoption and integration into new products are major barriers to these changes.  \n\n\n\nJoin us for our next Science of Alt Protein seminar where Dr. John Hammond\, Professor at the University of Reading\, will share the current challenges facing protein crops in the UK and a project his team is embarking upon to address this hurdle. We hope to see you there! \n\n\n\n\nRegister\n\n\n\n					\n	\n\n\n\n\n\n\nMeet the speaker\n\n\n\n\n\n\n\n\n\n\n\nDr. John Hammond\n\n\n\n\n\nPROFESSOR\, UNIVERSITY OF READING \n\n\n\nJohn Hammond is a Professor of Crop Science in the School of Agriculture\, Policy and Development and leads the University of Reading’s research into Sustainable Agriculture and Food Systems. He has published over 80 academic papers during his career and regularly contributes to discussions on the sustainability of our food production systems. Professor Hammond’s research has spanned a range of crops and has focused on the sustainability of their production. Fertilizer inputs to crops and adaptations to heat and drought stress are focal points of his research. \n\n\n\nProfessor Hammond graduated from the University of York with a 1st Class BSc in Applied and Environmental Biology (2000). He then continued his studies and completed a Ph.D. in Plant and Crop Science (2004) at the University of Nottingham. Undertaking a post-doc at the University of Warwick and then taking on a Group Leadership position there\, he led research into nutrient management of horticultural crops until 2010. In 2011\, he was awarded an Australian Research Council Future Fellowship at the University of Western Australia. One potential bottleneck for consumer acceptability is that extrusion processing adds to conceptions that alternative protein products are “highly processed” and\, therefore\, unhealthy. In reality\, literature studies demonstrate that extrusion cooking enhances protein digestibility\, reduces antinutrient content\, and can reduce ingredient allergenicity.  \n\n\n\nThis talk will review studies that demonstrate the effects of extrusion on plant protein digestibility and nutrition. We hope to see you there! \n\n\n\n\nRegister\n\n\n\n					\n	\n\n\n\n\n\nMeet the speaker\n\n\n\n\n\n\n\n\n\nDr. Maya Davidovich-Pinhas\n\n\n\nASSOCIATE PROFESSOR \n\n\n\nDr. Maya Davidovich-Pinhas is an Associate Professor at Technion-Israel Institute of Technology where she has headed the lipid and soft matter laboratory in the department of Faculty of Biotechnology and Food Engineering since 2015. The research done in her lab combines material science and engineering concepts toward the development of new soft matter systems for biotechnology and food applications. More specifically\, her research focuses on the structure-property-function relation of soft matter systems combining lipid and water phases using X-ray diffraction\, microscopy\, thermal\, rheology\, and texture analyses. Dr. Davidovich-Pinhas earned her B.Sc. in Biochemical Engineering and her M.Sc. and Ph.D. in Chemical Engineering from Technion\, Israel. Better questions address the context of “instead of what?” and “with what?”. Join us for our next Science of Alt Protein seminar where Professor Gardner will address this context and the steps to minimize bias in reporting regarding his recently published SWAP-MEAT study — the Study With Appetizing Plant-food — a Meat Eating Alternative Trial. \n\n\n\n\n\nMeet the speaker\n\n\n\n\n\n\n\n\n\nDr. Christopher Gardner\n\n\n\nPROFESSOR\, STANFORD UNIVERSITY \n\n\n\nChristopher Gardner holds a Ph.D. in Nutrition Science and is the Rehnborg Farquhar Professor of Medicine at Stanford. He is a co-author of the 2019 ADA Consensus Report on Nutrition Therapy for Adults With Diabetes or Prediabetes (Diabetes Care)\, and the current chair of the American Heart Association Nutrition Committee. For ~30 years his research has examined what to eat and what to avoid for optimal health. This includes more than 20 nutrition intervention trials conducted with >2\,000 participants. The primary study outcomes in these trials are typically cardiometabolic factors (e.g.\, insulin\, glucose\, lipids\, blood pressure\, inflammation/immune function\, body composition).
