In this seminar\, Dr. Frederico Ferreira of Técnico Lisboa will explain his GFI-funded research that combines bioprinting\, electrospinning\, and electrical stimuli to produce whole-cut cultivated fish fillets. \n\n\n\n\nMore about the discussion\n3D bioprinting has the potential to produce structured cultivated meat products of complex biomimetic designs shaping\, in a balancing manner\, muscle and fat-rich regions at a scale of tenths of millimetre. On the other hand\, electrospun fibers can be produced\, with diameters at the nanoscale\, able to mimic collagen geometries typical of fish myoseptum. Electroconductive fibers have been previously used to support electrical stimulation during maturation of several tissues\, including muscle. Different approaches for manufacturing 3D multi-material fish fillet exploring bioprinting and electrospun scaffolds will be presented. Novel formulations of muscle and fat edible bioinks\, compatible with fish myoblasts and adipocytes\, were developed using a macroalgae’s polysaccharide and natural conductive conjugated molecules. Zein proteins were used to produce polymeric fibers. Different cross-linking strategies will be presented. Edible conductive molecules can be introduced as dopants into the muscle bioinks formulations and electrospun fibers to increase electroconductivity and support electrical stimulation during muscle maturation. Microalgae containing polyunsaturated fatty acids\, as omega-3\, can be introduced into the fat bioinks. All bioinks and fibers were characterized for their biocompatibility as well as structural and mechanic properties. Several 3D designs of fish products were conceptualized and prototyped produced to demonstrate the wide range potential of the approaches considered. He also holds a B.Sc. (1999) in Applied Chemistry with specialization in Biotechnology and an MBA (2008)\, both from NOVA University. Currently\, Frederico is a Professor at Técnico Lisboa\, where his research and teaching are committed to fostering innovation and sustainability. In this presentation\, Dr. Mario Martinez\, Associate Professor at Aarhus University and GFI grantee\, will provide methods to unlock the fabrication of plant-based whole-muscle cut analogues using less refined plant protein fractions and scalable technologies (e.g.\, extrusion). Results from minimal processing will highlight the structuring synergies among endogenous components (e.g.\, polysaccharides and minerals) and exogenous ones (fabricated fillers). In this work\, computational workflows are being developed to efficiently predict the yield limits of each of these factors. One workflow builds on existing techno-economic analysis models by adding computational fluid dynamics and Bayesian optimization to provide predictions of optimum mass transfer\, mixing\, and hydrodynamic stress bioreactor performance. A second adds genome-scale metabolic modeling to predict cell growth response to metabolite concentrations. Towards this goal\, cost-effective carbon and nitrogen sources derived from environmentally benign processes are essential. Notably\, lignocellulose-derived sugars represent renewable and cheaper alternatives to refined sugars and food sources as carbon sources. However\, successful deployment of lignocellulose-derived sugars in the fermentative production of proteins and additives used in formulating alternative proteins is plagued by the co-generation of inhibitory compounds accumulated during the deconstruction of lignocellulosic materials to release fermentable sugars.  \n\n\n\nTo address this challenge\, Dr. Ujor and his team employ adroit engineering of established microbial workhorses as well as screen for novel strains and species that can efficiently neutralize or break down these inhibitory compounds. To minimize reliance on synthetic ammonium—a product of the Haber-Bosch Process characterized by high energy input and emission of large amounts of CO2—they are exploring nitrogen-fixing bacteria as potential drivers of fermentative production of alternative proteins.  \n\n\n\nTheir results show that overexpression of inhibitor detoxifying enzymes arms select bacterial species for increased and rapid removal/tolerance to lignocellulose-derived inhibitory compounds. Similarly\, Dr. Ujor and his team have identified select bacterial species with the inherent ability to utilize the inhibitory compounds as carbon sources. These organisms represent exciting candidates for the fermentative production of alternative proteins\, as well as molecules used as binders and foaming agents during the formulation of alternative proteins. Before GFI\, Lucas spent ten years at Algenol Biotech commercializing microbial-derived biofuels\, biofertilizers\, food ingredients\, and cosmetic ingredients. His expertise ranges across the bioprocess commercialization spectrum from strain development\, cultivation process development (USP)\, downstream process development (DSP)\, commercialization\, and GMP operations. Lucas holds a B.S. in Biology and Anthropology from the University of Pittsburgh and an M.S. in Environmental Science and Management from Duquesne University. \n\n\n\n\n\n\n\n\n\n\n\nBryan Quoc Le\, Ph.D.\n\n\n\nFACULTY RESEARCH FELLOW\, PACIFIC LUTHERAN UNIVERSITY \n\n\n\nDr. Bryan Quoc Le is a food scientist\, consultant\, and author who holds a Ph.D. in Food Science from the University of Wisconsin\, Madison. His doctoral research examined the biological effects of savory flavors from plant-based sources on mammalian cells. Presently a Faculty Research Fellow in the Department of Biology at Pacific Lutheran University\, he focuses on transforming food and agricultural waste into sustainable fermentation substrates for the alternative protein sector. Marika first joined GFI with a focus on alternative seafood. Through building relationships with the private sector\, she worked to accelerate the development of alternative seafood globally. Marika earned a BA in Animal Conservation from the University of Rochester and spent the last decade focused on animal conservation and strategic partnerships. \n\n\n\n\n\n\n\n\n\n\n\nClaire Bomkamp\, Ph.D.\n\n\n\nLEAD SCIENTIST\, CULTIVATED MEAT & SEAFOOD\, THE GOOD FOOD INSTITUTE \n\n\n\nClaire serves as Lead Scientist\, Cultivated Meat & Seafood and is a member of GFI’s Sustainable Seafood Initiative. She focuses on analyzing the technical landscape of the cultivated seafood industry\, identifying bottlenecks\, and engaging researchers in order to move cultivated seafood technology forward. She holds a PhD in neuroscience from the University of British Columbia and a bachelors in behavioral neuroscience from Western Washington University.
