Hice\, Ph.D.\n\n\n\nRegulatory Review Scientist and Microbiology Reviewer\, Division of Food Ingredients\, Office of Food Additive Safety\, Center for Food Safety and Applied Nutrition\, U.S. FOOD AND DRUG ADMINISTRATION \n\n\n\nOriginally from Milwaukee\, WI\, Dr. Stiffy Hice received their BS in Biological Science\, with minors in Printmaking and Psychology\, from the University of Tulsa in 2014; and their PhD in Food Science and Technology with a certificate in Food Safety and Defense from Iowa State University in 2019. After graduating from Iowa State University\, Dr. Hice joined the U.S. Food and Drug Administration (FDA) in 2019 as a Regulatory Review Scientist and Microbiology Reviewer in the Division of Food Ingredients (DFI) within the Office of Food Additive Safety (OFAS). Dr. Hice has managed the review of numerous Generally Recognized as Safe (GRAS) notices—with particular emphasis on microbial-derived ingredients\, bacteriophage preparations and live microbial cultures—as well as approval of direct food additive and color additive petitions that have been submitted to the Center for Food Safety and Applied Nutrition (CFSAN) at FDA. As a Regulatory Review Scientist\, one of Dr. Hice’s primary duties is managing both GRAS evaluation teams and petition review teams. Many submissions have robust regulatory and scientific considerations\, which must be evaluated to: (1) issue a response letter regarding the safety conclusions made by the submitter of a GRAS notice\, or (2) approve a food or color additive in response to a petition. As a Microbiology Reviewer\, Dr. Hice is charged with evaluating the microbiological safety of ingredients intended for use in conventional foods. Climate change\, economic shocks\, and geopolitical conflict have altered the production and flow of agricultural goods around the world\, while a growing global population and socioeconomic changes further strain our food systems. \n\n\n\nAnimal agriculture\, though an important source of nutrition and wealth\, can exacerbate the challenges posed by climate change\, disease emergence\, and economic shocks. Today\, many countries are seeking to change the way they produce food\, supplementing animal protein with non-animal protein sources that provide the precise experience of meat but require fewer inputs\, produce fewer greenhouse gas emissions\, and have simpler\, more adaptable supply chains. \n\n\n\nThese are known as alternative proteins. Created using plant-based or cellular agriculture\, alternative proteins have climate change benefits that are well documented\, but relatively less is known about their ability to address the global and domestic risks inherent to today’s food systems. \n\n\n\nWill alternative proteins reduce the risk of zoonotic disease transmission and antimicrobial resistance in food production? In this seminar\, Dr. Frederico Ferreira of Técnico Lisboa will explain his GFI-funded research that combines bioprinting\, electrospinning\, and electrical stimuli to produce whole-cut cultivated fish fillets. \n\n\n\n\nMore about the discussion\n3D bioprinting has the potential to produce structured cultivated meat products of complex biomimetic designs shaping\, in a balancing manner\, muscle and fat-rich regions at a scale of tenths of millimetre. On the other hand\, electrospun fibers can be produced\, with diameters at the nanoscale\, able to mimic collagen geometries typical of fish myoseptum. Electroconductive fibers have been previously used to support electrical stimulation during maturation of several tissues\, including muscle. Different approaches for manufacturing 3D multi-material fish fillet exploring bioprinting and electrospun scaffolds will be presented. Novel formulations of muscle and fat edible bioinks\, compatible with fish myoblasts and adipocytes\, were developed using a macroalgae’s polysaccharide and natural conductive conjugated molecules. Zein proteins were used to produce polymeric fibers. Different cross-linking strategies will be presented. Edible conductive molecules can be introduced as dopants into the muscle bioinks formulations and electrospun fibers to increase electroconductivity and support electrical stimulation during muscle maturation. Microalgae containing polyunsaturated fatty acids\, as omega-3\, can be introduced into the fat bioinks. All bioinks and fibers were characterized for their biocompatibility as well as structural and mechanic properties. Several 3D designs of fish products were conceptualized and prototyped produced to demonstrate the wide range potential of the approaches considered. In this presentation\, Dr. Mario Martinez\, Associate Professor at Aarhus University and GFI grantee\, will provide methods to unlock the fabrication of plant-based whole-muscle cut analogues using less refined plant protein fractions and scalable technologies (e.g.\, extrusion). Results from minimal processing will highlight the structuring synergies among endogenous components (e.g.\, polysaccharides and minerals) and exogenous ones (fabricated fillers). His research program focuses on translational biopolymer science\, approaching the structure and function of food biopolymers\, their binding potential to plant secondary metabolites\, the elucidation of their complex structural biochemistry\, and their food structuring behavior. In this work\, computational workflows are being developed to efficiently predict the yield limits of each of these factors. One workflow builds on existing techno-economic analysis models by adding computational fluid dynamics and Bayesian optimization to provide predictions of optimum mass transfer\, mixing\, and hydrodynamic stress bioreactor performance. A second adds genome-scale metabolic modeling to predict cell growth response to metabolite concentrations. He has deep technical expertise that allows him to engage with project finance and development at a foundational level\, ​​wrapping underlying technical breakthroughs in the required commercial structures to enable financing. He has seen over 1\,000 different projects over his career\, giving him unparalleled perspective into the structures\, risks\, and opportunities that are attractive to project finance investors and the minimum requirements to attract capital. \n\n\n\nPrior to joining Synonym\, Brentan served in numerous executive roles at New Energy Risk\, a leading technology performance insurer\, and oversaw the underwriting\, structuring and execution of every deal that New Energy Risk closed\, representing over $2BN in deployed insurance capital and $3BN in total project capital. Prior to New Energy Risk\, Brentan was an engineer\, tackling projects in failure root-cause analysis\, manufacturing quality control\, validation test design\, engineering design review\, and technology R&D for clients including Shell\, Microsoft\, BP\, General Motors\, and Columbia Sportswear. \n\n\n\nBrentan received his Ph.D. from Stanford University in Mechanical Engineering\, where he focused on solid fuel gasification and syngas utilization using solid-oxide fuel cell technology. He is the author of numerous peer-reviewed scientific publications\, has presented at a variety of technical symposia\, and has been honored as an NDSEG Fellow (2009-2012) and a Rohsenow Fellow (2007-2008). He holds MS and BS degrees in Mechanical Engineering from MIT. \n\n\n\n\n\n\n\n\n\n\n\nCrystal Bleecher\, P.E.\n\n\n\nDIRECTOR OF ENGINEERING\, SYNONYM \n\n\n\nCrystal is a professionally licensed chemical engineer and subject matter expert in fermentation process and facility design. She has over 18 years of experience tackling the challenges of commercializing novel fermentation processes and has extensive experience in process optimization\, value engineering\, and sterile and hygienic design. \n\n\n\nCrystal began her career as a process engineer\, working for cellulosic biofuel start-ups.  Most recently\, she spent 10 years at Merrick & Company\, leading a team of process engineers to develop designs for large capital fermentation projects\, ranging from $50-$800 million total installed cost.
