This technique has never been used to characterize extruded foods. Dr. Koksel is a food scientist with expertise in food processing and non-destructive assessments of food quality\, and her research program aims to tackle issues related to an ever-increasing demand for sustainable\, high-quality plant-based foods. Dr. Koksel’s creativity in exploring new approaches in these areas is particularly noteworthy as her program is at the interface between food processing and materials science. To bring Canadian crops from the field to our tables\, Dr. Koksel’s program looks at several operations – such as milling\, mixing\, sheeting\, baking\, texturization\, and extrusion – to transform these crops into foods with superb palatability and nutritional value. Since 2017\, she has secured >$1.4M in research funding as PI or co-PI and >$2.3M as co-investigator to establish a thriving research program at the University of Manitoba. Hice\, Ph.D.\n\n\n\nRegulatory Review Scientist and Microbiology Reviewer\, Division of Food Ingredients\, Office of Food Additive Safety\, Center for Food Safety and Applied Nutrition\, U.S. FOOD AND DRUG ADMINISTRATION \n\n\n\nOriginally from Milwaukee\, WI\, Dr. Stiffy Hice received their BS in Biological Science\, with minors in Printmaking and Psychology\, from the University of Tulsa in 2014; and their PhD in Food Science and Technology with a certificate in Food Safety and Defense from Iowa State University in 2019. After graduating from Iowa State University\, Dr. Hice joined the U.S. Food and Drug Administration (FDA) in 2019 as a Regulatory Review Scientist and Microbiology Reviewer in the Division of Food Ingredients (DFI) within the Office of Food Additive Safety (OFAS). Dr. Hice has managed the review of numerous Generally Recognized as Safe (GRAS) notices—with particular emphasis on microbial-derived ingredients\, bacteriophage preparations and live microbial cultures—as well as approval of direct food additive and color additive petitions that have been submitted to the Center for Food Safety and Applied Nutrition (CFSAN) at FDA. As a Regulatory Review Scientist\, one of Dr. Hice’s primary duties is managing both GRAS evaluation teams and petition review teams. Many submissions have robust regulatory and scientific considerations\, which must be evaluated to: (1) issue a response letter regarding the safety conclusions made by the submitter of a GRAS notice\, or (2) approve a food or color additive in response to a petition. As a Microbiology Reviewer\, Dr. Hice is charged with evaluating the microbiological safety of ingredients intended for use in conventional foods. Climate change\, economic shocks\, and geopolitical conflict have altered the production and flow of agricultural goods around the world\, while a growing global population and socioeconomic changes further strain our food systems. \n\n\n\nAnimal agriculture\, though an important source of nutrition and wealth\, can exacerbate the challenges posed by climate change\, disease emergence\, and economic shocks. Today\, many countries are seeking to change the way they produce food\, supplementing animal protein with non-animal protein sources that provide the precise experience of meat but require fewer inputs\, produce fewer greenhouse gas emissions\, and have simpler\, more adaptable supply chains. \n\n\n\nThese are known as alternative proteins. Created using plant-based or cellular agriculture\, alternative proteins have climate change benefits that are well documented\, but relatively less is known about their ability to address the global and domestic risks inherent to today’s food systems. \n\n\n\nWill alternative proteins reduce the risk of zoonotic disease transmission and antimicrobial resistance in food production? As product availability and variety grow\, the industry’s supply chains must keep pace to avoid shortages and improve accessibility and affordability. Priera has bachelor’s degrees in chemistry and math from the University of California\, Santa Cruz as well as a master’s and a doctorate in organic chemistry from the University of California\, Los Angeles. \n\n\n\n\n\n\n\n\n\n\n\nFloor Buitelaar\n\n\n\nMANAGING PARTNER\, BRIGHT GREEN PARTNERS  \n\n\n\nFloor is an accomplished leader in alt proteins\, and has directed 25+ projects for global clients like Ajinomoto and Kraft Heinz within the alternative protein industry. She is also a sought-after conference speaker\, sharing her insights on industry trends\, challenges and opportunities and an honoree of Forbes 30 Under 30 list due to her work at Bright Green Partners. \n\n\n\n\n\n\n\n\n\n\n\nHeinrich von Jagwitz\, Ph.D.\n\n\n\nPROJECT MANAGER\, BRIGHT GREEN PARTNERS \n\n\n\nHeinrich’s work at Bright Green Partners spans all parts of the alt. protein value chain with a special focus on alt. protein production technology and facilities. He has led various design studies for large greenfield facilities as well as due diligence for existing production sites.
