Professor Carla Molento started her engagement with cellular animal science from an animal ethics standpoint\, which has led to initiatives such as introductory courses\, research projects\, outreach activities\, and powerful partnerships\, such as the one between the Federal University of Parana (UFPR) and GFI Brazil. Simultaneously\, other relevant initiatives by different actors have evolved\, resulting in further academic advancements in the alternative protein field. In this talk\, Dr. Molento will highlight recent developments and current discussions regarding the alternative protein landscape in Brazil. \n\n\n\n\n\nMeet the speaker\n\n\n\n\n\n\n\n\n\nCarla Molento\, DVM\, MSc\, PhD\n\n\n\nPROFESSOR AND COORDINATOR OF THE ANIMAL SCIENCE LABORATORY \n\n\n\nProfessor Carla Molento is a researcher in animal welfare science and professor of animal welfare at the Federal University of Parana (UFPR) in Brazil. She joined the university’s Animal Welfare Laboratory upon its founding in 2004. She has also been involved with legislation and norms related to animal protection\, serving for six years as the president of the Animal Welfare Commission at the Brazilian Federal Veterinary Medicine Council. This talk will focus primarily on Dr. Boundy-Mills’ research on yeasts that convert inexpensive substrates into oils. This includes substitutes for animal fat and tropical oils for meat substitutes\, renewable alternatives to petroleum\, and a new class of glycolipid biosurfactants. Her research program uses the more than 1\,500 species in the Phaff Yeast Culture Collection at UC Davis\, plus over 60 years of unpublished data. By using her knowledge of yeasts in general\, and the collection’s specimens and data\, partnerships with industry have resulted in the discovery of yeasts useful for a broad range of basic and applied uses. \n\n\n\n\n\nMeet the speaker\n\n\n\n\n\n\n\n\n\nDr. Kyria Boundy-Mills\n\n\n\nCURATOR\, PHAFF YEAST CULTURE COLLECTION\, DEPARTMENT OF FOOD SCIENCE AND TECHNOLOGY\, UNIVERSITY OF CALIFORNIA DAVIS \n\n\n\nDr. Kyria Boundy-Mills earned her Ph.D. in biochemistry at the University of Minnesota\, studying one gene of one yeast species. After postdoctoral fellowships in microbial ecology there and at North Carolina State University\, she relocated to UC Davis and partnered with yeast microbiologist and emeritus professor Dr. Herman Phaff. She realized how much she DIDN’T know about yeasts\, and absorbed just a fraction of his considerable enthusiasm for yeasts. She took over the management of the collection when Dr. Phaff passed away in 2001. This technique has never been used to characterize extruded foods. Dr. Koksel is a food scientist with expertise in food processing and non-destructive assessments of food quality\, and her research program aims to tackle issues related to an ever-increasing demand for sustainable\, high-quality plant-based foods. Dr. Koksel’s creativity in exploring new approaches in these areas is particularly noteworthy as her program is at the interface between food processing and materials science. To bring Canadian crops from the field to our tables\, Dr. Koksel’s program looks at several operations – such as milling\, mixing\, sheeting\, baking\, texturization\, and extrusion – to transform these crops into foods with superb palatability and nutritional value. Since 2017\, she has secured >$1.4M in research funding as PI or co-PI and >$2.3M as co-investigator to establish a thriving research program at the University of Manitoba.
