SUMMARY:The Science of Alt Protein: Manufacturing cultured fish fillet
DESCRIPTION:The Science of Alt Protein: Manufacturing cultured fish filletPast\n\n\n\n\nLearn how Dr. Frederico Ferreira is combining bioprinting\, electrospinning\, and electrical stimuli to produce cultivated fish fillets. Join us for a networking session after Dr. Ferreira’s talk to meet your next collaborator! \n\n\n\n	Share this page on Facebook\n	\n	Share on Facebook\n\n\n	Share this page on Twitter\n	\n	Share on X\n\n\n	Share this page on LinkedIn\n	\n	Share on LinkedIn\n\n\n\n\n\n\n\n\n\n \n\n\n\n\n	\n\n\n\n\n\nWebinar description\n\n\n\nCultivating seafood that recapitulates the taste and texture of conventional seafood requires leveraging multiple techniques. In this seminar\, Dr. Frederico Ferreira of Técnico Lisboa will explain his GFI-funded research that combines bioprinting\, electrospinning\, and electrical stimuli to produce whole-cut cultivated fish fillets. \n\n\n\n\nMore about the discussion\n3D bioprinting has the potential to produce structured cultivated meat products of complex biomimetic designs shaping\, in a balancing manner\, muscle and fat-rich regions at a scale of tenths of millimetre. On the other hand\, electrospun fibers can be produced\, with diameters at the nanoscale\, able to mimic collagen geometries typical of fish myoseptum. Electroconductive fibers have been previously used to support electrical stimulation during maturation of several tissues\, including muscle. Different approaches for manufacturing 3D multi-material fish fillet exploring bioprinting and electrospun scaffolds will be presented. Novel formulations of muscle and fat edible bioinks\, compatible with fish myoblasts and adipocytes\, were developed using a macroalgae’s polysaccharide and natural conductive conjugated molecules. Zein proteins were used to produce polymeric fibers. Different cross-linking strategies will be presented. Edible conductive molecules can be introduced as dopants into the muscle bioinks formulations and electrospun fibers to increase electroconductivity and support electrical stimulation during muscle maturation. Microalgae containing polyunsaturated fatty acids\, as omega-3\, can be introduced into the fat bioinks. All bioinks and fibers were characterized for their biocompatibility as well as structural and mechanic properties. Several 3D designs of fish products were conceptualized and prototyped produced to demonstrate the wide range potential of the approaches considered. Finally\, strategies for fish cell culture will be discussed.  \n\n\n\n\n\n\n	\n \n \n \n \n \n \n \n \n \n \n\nJoin our networking session after the webinar\n\n\n\nJoin this networking event to discuss the latest scientific developments in cultivated seafood. This technique has never been used to characterize extruded foods. In this seminar\, Dr. Filiz Koksel of the University of Manitoba will discuss her GFI-funded research to obtain real-time ultrasonic information on extruded plant-based meats and link this information to the physical (i.e.\, textural) and nutritional quality (i.e.\, protein digestibility) of the end-product. \n\n\n\n\n\nMeet the speaker\n\n\n\n\n\n\n\n\n\nDr. Filiz Koksel\n\n\n\nASSISTANT PROFESSOR OF FOOD PROCESSING\, FOOD AND HUMAN NUTRITIONAL SCIENCES DEPARTMENT\, FACULTY OF AGRICULTURAL AND FOOD SCIENCES\, UNIVERSITY OF MANITOBA \n\n\n\nDr. Filiz Koksel is an Assistant Professor in the Department of Food and Human Nutritional Sciences at the University of Manitoba. Dr. Koksel is a food scientist with expertise in food processing and non-destructive assessments of food quality\, and her research program aims to tackle issues related to an ever-increasing demand for sustainable\, high-quality plant-based foods. Dr. Koksel’s creativity in exploring new approaches in these areas is particularly noteworthy as her program is at the interface between food processing and materials science. To bring Canadian crops from the field to our tables\, Dr. Koksel’s program looks at several operations – such as milling\, mixing\, sheeting\, baking\, texturization\, and extrusion – to transform these crops into foods with superb palatability and nutritional value. Since 2017\, she has secured >$1.4M in research funding as PI or co-PI and >$2.3M as co-investigator to establish a thriving research program at the University of Manitoba. She has also mentored and contributed to training 30+ highly qualified personnel\, including K-12\, undergraduate\, and graduate students\, postdoctoral fellows\, research associates\, and visiting scholars. \n\n\n\n\n\n\n\n\nUpcoming events\n\n\n\nView all events\n\n\n\n\n	\n \n \n \n \n \n \n \n \n \n November 12\, 2026\n \n Virtual Event\n \n \n \n The Science of Alt Protein: Genome-scale modeling of porcine cell metabolism\n \n \n \n Explore how a GFI-funded genome-scale metabolic model can reveal porcine cell nutrient requirements and inform lower-cost culture media for cultivated…

DESCRIPTION:Science of Alt Protein: Production of animal fat substitutes by yeastsPast\n\n\n\n\nJoin our next Science of Alt Protein seminar where Dr. Kyria Boundy-Mills of UC Davis will share her research on yeasts that convert inexpensive substrates into oils\, including substitutes for animal fat and tropical oils for meat alternatives. \n\n\n\n	Share this page on Facebook\n	\n	Share on Facebook\n\n\n	Share this page on Twitter\n	\n	Share on X\n\n\n	Share this page on LinkedIn\n	\n	Share on LinkedIn\n\n\n\n\n\n\n\n\n\nDr. Kyria Boundy-Mills\n\n\n\nCurator\, Phaff Yeast Culture Collection\, Department of Food Science and Technology\, University of California Davis \n\n\n\n\nRegister\n\n\n\n	\n\n\n\n\n\nWebinar description\n\n\n\nApplied uses of yeasts have expanded well beyond beer\, bread\, and wine. This talk will focus primarily on Dr. Boundy-Mills’ research on yeasts that convert inexpensive substrates into oils. This includes substitutes for animal fat and tropical oils for meat substitutes\, renewable alternatives to petroleum\, and a new class of glycolipid biosurfactants. Her research program uses the more than 1\,500 species in the Phaff Yeast Culture Collection at UC Davis\, plus over 60 years of unpublished data. By using her knowledge of yeasts in general\, and the collection’s specimens and data\, partnerships with industry have resulted in the discovery of yeasts useful for a broad range of basic and applied uses. \n\n\n\n\n\nMeet the speaker\n\n\n\n\n\n\n\n\n\nDr. Kyria Boundy-Mills\n\n\n\nCURATOR\, PHAFF YEAST CULTURE COLLECTION\, DEPARTMENT OF FOOD SCIENCE AND TECHNOLOGY\, UNIVERSITY OF CALIFORNIA DAVIS \n\n\n\nDr. Kyria Boundy-Mills earned her Ph.D. in biochemistry at the University of Minnesota\, studying one gene of one yeast species. After postdoctoral fellowships in microbial ecology there and at North Carolina State University\, she relocated to UC Davis and partnered with yeast microbiologist and emeritus professor Dr. Herman Phaff. She realized how much she DIDN’T know about yeasts\, and absorbed just a fraction of his considerable enthusiasm for yeasts. She took over the management of the collection when Dr. Phaff passed away in 2001. As steward of this 100-year-old collection\, she rescued and upgraded the collection\, expands it through acquisitions\, uses it in her own research program\, and amplifies basic and applied use of the collection worldwide. \n\n\n\n\n\n\n\n\nUpcoming events\n\n\n\nView all events\n\n\n\n\n	\n \n \n \n \n \n \n \n \n \n November 12\, 2026\n \n Virtual Event\n \n \n \n The Science of Alt Protein: Genome-scale modeling of porcine cell metabolism\n \n \n \n Explore how a GFI-funded genome-scale metabolic model can reveal porcine cell nutrient requirements and inform lower-cost culture media for cultivated…

DESCRIPTION:The future of cultivated meat & seafood: Consumer acceptance\, insights\, and opportunitiesPast\n\n\n\n\nHear from researchers and industry experts about the state of consumer acceptance of cultivated meat globally\, and how to increase acceptance through consumer education and effective messaging.  \n\n\n\n	Share this page on Facebook\n	\n	Share on Facebook\n\n\n	Share this page on Twitter\n	\n	Share on X\n\n\n	Share this page on LinkedIn\n	\n	Share on LinkedIn\n\n\n\n\n\n\n\n\n\nIn order to register for this specific event\, you must register for GFI LINC. \n\n\n\n\n	\n\n\n\n\n\nEvent description\n\n\n\nThe benefits of cultivating meat are well established —the ability to produce meat that is identical to conventional animal meat more sustainably\, decreasing GHG emissions\, deforestation\, water pollution\, and antibiotic resistance. Nevertheless\, the success of cultivated meat is directly tied to consumer acceptance. In this GFI LINC seminar\, we will hear from researchers and industry experts about the state of consumer acceptance of cultivated meat globally\, and how to increase acceptance through consumer education and effective messaging.  \n\n\n\n\n\nEvent speakers\n\n\n\nKeri Szejda\, Founder & Principal Research Scientist at North Mountain Consulting Group Sophie Armour\, Senior Communications Manager at GFI Europe Ben Friedman\, Chief Growth Officer at Wildtype Andrew Noyes\, VP\, Head of Global Communications & Public Affairs at Eat Just\n\n\n\n\n	\n \n \n \n \n\n \n\n \n\n \n Learn more\n \n \n	\n\n\n\n\n\nMore about GFI LINC\n\n\n\nGFI LINC (Learn\, Inspire\, Network\, Collaborate) is a new industry initiative that leverages the Good Food Institute’s unique position in the alternative protein ecosystem to bring together companies across the global value chain to gain key insights into the alternative protein market and foster new collaborations and partnerships. We will host a quarterly seminar dedicated to topics that are critical to addressing industry bottlenecks and accelerating the growth of the alternative protein sector. This community is founded upon the belief that by convening a diverse range of stakeholders\, we can drive industry-wide change and grow the entire sector in a way that benefits all. \n\n\n\nIn order to join the community\, you must work for one of the following types of companies: \n\n\n\nA traditional food manufacturer/B2B supplier (e.g.\, ingredients\, equipment) with a clear intent of dedicating at least a part of the business to alternative proteins. An alternative protein startup/company that is mature in terms of scale (beyond conceptual/early R&D stage) and funding (minimum series A).\n\n\n\n\n\n\nUpcoming events\n\n\n\nView all events\n\n\n\n\n	\n \n \n \n \n \n \n \n \n \n November 12\, 2026\n \n Virtual Event\n \n \n \n The Science of Alt Protein: Genome-scale modeling of porcine cell metabolism\n \n \n \n Explore how a GFI-funded genome-scale metabolic model can reveal porcine cell nutrient requirements and inform lower-cost culture media for cultivated…
