Her work helps to ensure the seamless execution of GFI’s corporate strategy and stakeholder engagement initiatives. \n\n\n\nThe CE team conducts research and share insights to educate the public on alternative proteins and champion their adoption by the food industry\, including manufacturers\, retailers\, restaurants\, investors\, and more. By 2050\, the global demand for meat is projected to rise significantly. By reimagining how meat is made\, we can meet consumers where they are. Our work makes it possible for alternative proteins to increasingly compete with conventional meat\, seafood\, eggs\, and dairy on the key drivers of consumer choice: taste\, price\, and convenience. We analyze the market\, uncover consumer insights\, identify AP white spaces and opportunities\, and build the community. \n\n\n\nEmma has previously overseen GFI’s market and consumer insights zone\, where she helped develop GFI’s alternative protein research agenda and its flagship State of the Industry reports. Before GFI\, she worked in strategy\, marketing\, and communications in the design industry as well as in the health education and access sector. She has a background in the TED community\, founding and curating regional TEDx events and helping thinkers hone their ideas worth spreading. She holds a BA in English with a concentration in Creative Writing from Cornell University. \n\n\n\n\n\n\n\n\nUpcoming events\n\n\n\nView all events\n\n\n\n\n	\n \n \n \n \n \n \n \n \n October 13\, 2026\n McNamara Alumni Center\n \n \n \n Bridge2Food North America\n \n \n \n Join GFI at Bridge2Food North America\, where food industry leaders will gather to explore the latest developments in ingredient innovation… \n\n \n \n \n \n \n \n \n \n \n \n October 13\, 2026\n FAO Headquarters\n \n \n \n World Food Forum 2026: Protein diversification for the Global South\n \n \n \n How can protein diversification strengthen food systems across the Global South? Fermentation\, our familiar friend from bread and beer\, is fermenting a new wave in food: sustainable\, protein-packed alternatives! Their magic lies in efficiency. Compared to traditional animal agriculture\, fermentation requires a fraction of land and water\, slashing environmental impact.  \n\n\n\nThe future holds exciting possibilities for this innovative approach to providing nutritious and environmentally friendly protein sources. The exciting world of fermentation-enabled food proteins offers a diverse range of ingredient options\, both for the microbes themselves (yeast\, algae\, fungi\, etc) and the nutrients they feed on (sugars\, lipids\, starches\, etc). And it’s not just about saving the planet. Scientists can use fermentation to craft proteins with specific nutritional needs in mind\, whether it’s boosting Omega-3s or tailoring amino acid profiles. And unlike livestock\, fermentation scales rapidly\, meeting the demands of a growing population without straining resources.  \n\n\n\nThis isn’t just about replicating existing food. Fermentation unlocks a world of possibilities: steaks grown from fungi\, lab-made dairy with perfect consistency\, and endless variations of delicious\, nutritious protein sources. As we will discuss in this webinar\, challenges remain. Cost and regulation are hurdles to overcome. But the potential is undeniable. Fermentation-enabled proteins are poised to transform our food system\, offering a sustainable\, efficient\, and delicious path to a protein-secure future. \n\n\n\nThis is a free-to-attend webinar. Attendees will have the opportunity to hear from industry experts as well as interact through Q&A sessions \n\n\n\n\n\nMeet the speakers\n\n\n\n\n\n\n\n\n\nAdam Leman\, Ph.D.\n\n\n\nLEAD SCIENTIST\, FERMENTATIONTHE GOOD FOOD INSTITUTE \n\n\n\nAdam is a Lead Scientist\, Fermentation at GFI and is focused on the development of biomass fermentation and precision fermentation biotechnology for food protein.
